Pumpkin Pie Cookies Recipe

Cider cookies taste like donuts. Soft, chewy cider-filled sugar cookies with apple cider butter, cinnamon sugar, and glaze.  This cozy fall cookie recipe will please everyone!

-2 cups apple cider -20 tablespoons unsalted butter -2½ cups all purpose flour -2 teaspoons apple pie spice -1 teaspoon cornstarch -1 teaspoon baking powder -¼ teaspoon baking soda -½ teaspoon salt -1¼ cup  light brown sugar -¼ cup granulated sugar -1 large egg -1 large egg yolk -1 teaspoon vanilla extract


Fill a small sauce pan with apple cider. Slowly boil or simmer apple cider over medium-high heat. Keep cooking cider until it reaches ¼ cup (59 ml). This takes 15–20 minutes.

Browned crumbs should float at the bottom of the butter once the foam subsides. Mix flour, baking powder, baking soda, cornstarch, ground spices, and salt in another basin.

Mix the cooled browned butter, light brown, and granulated sugars in a large bowl. Add the egg, egg yolk, apple cider, Mix dry ingredients with wet until just mixed.

I enjoy doing this about Preheat the oven to 375 F (190 C) for 30 minutes before baking the cookies. Cover a large baking sheet with parchment.

Bake cookies at 375 F (190 C) for 9–11 minutes until edges are firm and centers are slightly puffed.
