Banana Mini Muffins Bread

Banana mini muffins are just like banana bread, just smaller! Simple ingredients make these banana mini muffins easy to create. Moist, fluffy, and banana-flavored, they make a quick and tasty breakfast or snack.

-1½ cups all purpose flour -1 tsp baking powder -¼ teaspoon baking soda -¼ teaspoon salt -1 cup mashed banana -½ cup granulated sugar -¼ cup maple syrup -6 tbsp unsalted butter -1 large egg -1 tsp vanilla extract


Heat oven to 375 F (190 C). Lightly butter a 24-cup mini muffin pan. Mix flour, baking powder, baking soda, and salt in a bowl.

Mix the mashed banana, sugar, maple syrup, melted butter, egg, and vanilla extract until smooth.  Incorporate the dry ingredients into the wet until no flour remains.

Scoop banana mini muffin batter into each well with a tablespoon-sized cookie scoop. Bake the muffins for 12-14 minutes until

The sides are lightly brown and the tops spring back when softly touched.  Let muffins cool in pan for 15 minutes. Remove them from the pan gently and enjoy!
