Caramelized Apple Spice Cake

Autumn has arrived early. The air is cool. Just turning leaves. Make everything spicy! I like apples + chai than pumpkin or pumpkin spice. Caramelised apple spice cake contains all my fall favourites. Includes extra salted maple caramel.  

-3-4 medium-large apples -2 tbsp unsalted butter -4 tbsp maple syrup -1 tbsp ground cinnamon -1 c unsalted butter -8 oz. cream cheese -4 c powdered suga

INGREDIENTS

-2-3 tbsp milk of choice -1 tsp vanilla extract -½ tsp salt -salted maple caramel -1 c pure maple syrup -2 tbsp unsalted butter -½ - 1 tsp flaky salt

Medium sauce pan, melt butter. Add cubed apples and simmer 5 minutes over medium heat after melting. A little apple browning. Add ground cinnamon and maple syrup.

INSTRUCTIONS

Mix well. Keep cooking on medium for 5 minutes. Syrup thickens, fruits soften. Blend or process immediately after removing from heat. Before pureeing,

Cool apples for 10 minutes or until about room temperature. Measure 1 c. Leftovers can be eaten with yoghurt, granola, bread, etc.

Although optional, this step gives the cake a great texture and flavour. Instead of pureeing, mash the apples like banana bread.

When the cake is baking, create brown butter. Brown butter is made by melting butter in a transparent heavy-bottom skillet or sauce pan. You can use the apple caramelizer.

Whisk continually until brown specks develop when butter foams. Remove from heat, pour into clean bowl, skim froth, and cool to room temperature (25-30 minutes).

Cream brown butter and cream cheese for 4-5 minutes in a stand mixer with paddle attachment or electric mixer and beaters.
