Olive Oil Cookies

Cherry turnovers are flaky puff pastry pastries filled with sweet cherry pie filling. Pour vanilla glaze over these buttery cherry puff pastry turnovers. They make the perfect quick breakfast or dessert.

-1 box puff pastry -21 cherry pie filling -1 large egg, lightly beaten -3 - 4 tablespoons granulated sugar -1 cup powdered sugar -1 teaspoon vanilla extract -2 tablespoons milk

INGREDIENTS

Preheat oven to 400°F. Parchment two large baking sheets. Use one puff pastry sheet to make a square. Cut puff pastry square into four pieces.

From bottom left to top right, imagine a diagonal line breaking the pastry square into two triangles. Place 1-2 teaspoons cherry pie filling in the upper triangle center, slightly above the line.

Brush puff pastry square edges with egg wash. Brush turnovers with half the barely beaten egg. Raise the bottom right corner to top left. Gently press corners. Press puff pastry edges into triangles.

If filling leaks, fine. Remove any filler. Seal puff pastry seams with fork. Egg wash each cherry turnover. If turnovers are warm, refrigerate the baking sheet for 15–30 minutes.

Cherry puff pastry turnovers should be golden brown after 18–22 minutes. Cool 3–5 minutes on the hot baking sheet. Rack-cool to room temperature.

Blend powdered sugar, milk, and vanilla essence to produce vanilla glaze. Pour glaze on cooled turnovers. Heated or room temperature.
