Cornflake Cookies Recipe

Thick, buttery cornflake cookies contain old-fashioned oats and cornflakes. Crisp rims and gooey interiors define these corn flakes cookies. This 30-minute cornflake cookie recipe is simple to bake and enjoy. 

-2 cups all purpose flour -½ teaspoon baking soda -½ teaspoon baking powder -½ teaspoon salt -1 cup unsalted butter -½ cup granulated sugar -½ cup light brown sugar -1 large egg -1 large egg yolk -2 teaspoons vanilla extract -1 -cup old fashioned oats -1 cup cornflakes cereal

INGREDIENTS

Pre-heat the oven to 350 F (177 C) for 20–30 minutes before baking the cookies. Cover a large baking sheet with parchment. Melt butter in a bowl and refrigerate for 10 minutes.

Mix flour, baking soda, baking powder, and salt in another bowl.  Stir the cooled melted butter, light brown sugar, and granulated sugar in a large bowl.

Add egg, egg yolk, and vanilla essence and mix thoroughly. Mix dry ingredients into wet ingredients slowly until just mixed. Add oats and cornflakes and mix well.

Using a medium cookie scoop (2 tablespoons, 30 ml), scoop oatmeal cornflake cookie dough and lay balls 2 inches apart on the lined baking sheet.

Bake cookies at 350 F (177 C) for 10-12 minutes until edges are firm and centers are slightly puffed.
