Delicious S'Mores Brownies Recipe

S'mores Brownies are fudgy and scrumptious. This brownie has a great cookie base, fudgy brownie, and the best meringue. These s'mores brownies are delicious and popular.  

COOKIE CRUST – 120 g digestive or graham cracker – 40 g butter BROWNIE – 60 g butter melted – 50 g dark chocolate chip – 20 g cocoa powder – 85 g granulated sugar – 85 g brown sugar – 2 large eggs room temperature – 45 g oil canola or vegetable – 1 teaspoon vanilla extract – 50 g all-purpose flour – 2 teaspoon cornstarch – ¼ teaspoon salt MERINGUE – 90 g egg whites about 3 egg white – 180 g granulated sugar – ½ teaspoon vanilla paste


Begin by heating the oven to 160ºC/325ºF. Parchment 20x20 cm pan. A food processor turns cookies into fine sand. Butter melts. Process cookies and melted butter.  

Step 1


A glass bottom flattens cookie crumbs in the baking pan. Bake 10 minutes. Make brownie batter while baking.  

Step 2

Set aside a bowl of flour, cornstarch, and salt. Melt butter and chocolate. Mix cocoa powder and melted chocolate in a large basin with a hand whisk or electric mixer.  

Step 3

Stir in brown and granulated sugars. Mix in eggs. Whisk after addition for 1-2 minutes. Mix oil with vanilla.  

Step 4

Finally, gradually mix dry ingredients into batter. Smooth batter in pan. Bake 30-35 minutes. Cool completely before meringue.  

Step 5

Fill a stand or hand mixer bowl with egg whites and sugar. Avoid touching simmering water with the bowl. Swirl the mixture with your mixer's whisk attachment until the sugar granules dissolve into the egg whites.  

Step 6

After cooling, turn on your stand mixer on high. Mix 5–6 minutes until the bowl is room temperature and the meringue has stiff peaks. Mix in vanilla.  

Step 7

Remove the brownie from the pan to a platter. Top cooled brownie with meringue and broil until golden.  

Step 8

Brownies are cut with a sharp, hot-water-soaked knife. Do this between cuts for clean slices.
