French Apple Cake Recipe

French apple cake is delicious rum cake with tart apple pieces. A flaky golden brown crust and a delicate dusting of powdered sugar top its soft and moist crumb. Traditional French apple rum cake has elegant simplicity.  

-1 cup all purpose flour -1 teaspoon baking powder -½ teaspoon salt -2 large eggs -¾ cup granulated sugar -2 teaspoons vanilla extract -3 tablespoons dark rum -½ cup unsalted butter -4 cups peeled, cored and diced apples -2 tablespoons granulated sugar -2 - 3 tablespoons powdered sugar 


Heat oven to 350 F . Grease and line an 8- or 9-inch springform or cake pan with parchment paper. Melt ½ cup butter in a small bowl and let cool to room temperature (15 minutes).

Mix flour, baking powder, and salt in a large bowl. Whisk eggs and sugar in a large bowl until smooth. Whisk until eggs and sugar thicken and lighten to ribbon stage.

Lift the whisk and let the liquid drip like ribbons. Alternate adding ⅓ of dry ingredients and ½ of melted butter into the wet mixture. Continue until ingredients are just mixed.

Incorporate sliced apple chunks. Put the apple rum cake batter in the pan evenly. Add sugar if desired.

Allow the cake pan to cool for 15–20 minutes. Remove the cake from the pan gently and let it cool for 10–15 minutes.
