Fudgy Peppermint Brownies Recipe

Fudgy Peppermint Brownies with three layers of pure joy are holiday goodness! A fudgy brownie with peppermint filling, chocolate, and chopped candy canes.  

BROWNIE – 90 g butter melted – 75 g dark chocolate chip – 35 g cocoa powder – 130 g granulated sugar – 130 g brown sugar – 2 large eggs room temperature – 1 ½ teaspoon vanilla extract – 75 g all-purpose flour – 1 tablespoon cornstarch – ½ teaspoon salt PEPPERMINT FILLING – 240 g powdered sugar – 30 g butter – ½ teaspoon vanilla bean paste – ¼ teaspoon peppermint extract – 2 tablespoon full-fat milk DARK CHOCOLATE – 110 g dark chocolate – 1 teaspoon oil – 4-5 candy canes crushed


BROWNIES Start by preheating the oven to 160ºC/325ºF. Line 20x20 cm pan with parchment paper. Pour flour, cornstarch, and salt into a basin.  

Step 1


Heat butter and chocolate in a double boiler or microwave. Mix cocoa powder into butter/chocolate. Manually mix in brown and granulated sugars.  

Step 2

Add vanilla and eggs one at a time. After integration, whisk for 1-2 minutes to get the crinkle top. Whisk dry ingredients into batter carefully.  

Step 3

Spread brownie batter in pan with spatula. Bake 35-37 minutes. Cool it fully on a rack.  

Step 4

PEPPERMINT FILLING Smoothly combine all ingredients with an electric hand mixer or stand mixer. Spread filling evenly over brownies and put aside while cooking dark chocolate.  

Step 5

DARK CHOCOLATE Just melt chocolate in a heatproof bowl in the microwave or double boiler. Mix with vegetable oil. Pour over peppermint filling evenly.  

Step 6

Cut and sprinkle peppermint canes on melted chocolate. Chocolate freezes for 15 minutes. Remove from freezer and enjoy.
