Hot Chocolate Brownie Cookies Recipe

The ultimate chewy and fudgy brownie cookie prepared with hot chocolate. Hot cocoa brownie cookies have sticky marshmallows. Like little marshmallow hot chocolate, they're easy to create and enjoy.

-8 oz. good quality chocolate bar -½ cup unsalted butter -¾ cup  granulated sugar -2 large eggs -1 oz. packet of powdered hot chocolate mix -2 tsp instant espresso powder -1 tsp baking powder -½ tsp salt -¾ cup all purpose flour -½ cup marshmallow crème

INGREDIENTS

Preheat oven to 350°F. Parchment two big baking sheets. Set aside. Heating a glass or dish of water. Butter and chocolate melt in a microwave-safe basin for 1 minute. Mix butter and semi-melted chocolate.

Mix sugar and eggs in a stand mixer with the whisk attachment on medium speed until light, frothy, and pale yellow. Around 4-5 minutes. Add melted chocolate slowly.

Make eggs and sugar cohesive. Scrape bowl sides and bottom. Combine hot chocolate, espresso, baking powder, and salt. Mix slowly. Scrape bowl sides and bottom.

Mix flour into hot chocolate cookies on low until mixed. Bowl needs scrubbing. Dip a big spoon in hot water. Take a heaping tablespoon marshmallow creme.

Marbled effect from soft whirling. With a large scoop, scoop 3–4 large cookies. Bake sheets of cookie batter. Space cookies 2-3 inches apart.

Repeat swirling and scooping until dough/batter gone. Bake cookies on the center rack for 10-14 minutes to firm edges. Cores fragment and hardly set.

Cookies should cool entirely on the baking sheet on a rack. This takes 10-15 minutes. Remove cookies from parchment paper with a spatula, cool on a rack, and enjoy!
