Iced Oatmeal Cookies

Soft, chewy iced oatmeal cookies with vanilla icing and cozy spices.  These frosted oatmeal cookies are my favorite because they don't need refrigeration and are quick to make. These classic oatmeal cookies are everyone's favorite comfortable cookie!

-2 cups old fashioned -2 cups all purpose flour -2 teaspoons ground cinnamon -¼ teaspoon ground nutmeg -¾ teaspoon baking soda -½ teaspoon salt -1 cup unsalted butter melted -1 cup light brown sugar -½ cup granulated sugar -1 large egg -1 large egg yolk -2 tablespoons molasses -2 teaspoons vanilla extract

INGREDIENTS

Pre-heat the oven to 350 F (177 C) for 20–30 minutes before baking the cookies. Cover a large baking sheet with parchment. Melt butter in a small bowl and refrigerate for 10 minutes.

Mix the flour, processed oats, baking soda, ground spices, and salt in another basin. Stir the cooled melted butter, light brown sugar, and granulated sugar in a large bowl.

Add egg, egg yolk, molasses, and vanilla extract and mix well. Mix dry ingredients into wet ingredients slowly until just mixed. I recommend doing this with ¼ of the dry ingredients.

Using a medium cookie scoop (2 teaspoons, 30 ml), scoop oatmeal cookie dough and position balls 3 inches (8 cm) apart on the lined baking sheet. Bake cookies at 350 F (177 C) for 10-12 minutes

Until edges are firm and centers are slightly puffed. Mix milk or water with powdered sugar until smooth. Increase liquid or powdered sugar for a thinner glaze or thicker icing.
