Lucky Charms Cookies

Lucky Charms are buttery, chewy sugar cookies with magical marshmallows in multicolor. Rolling these easy-to-make Lucky Charms cereal cookies in crunchy sugar before baking and topping them with marshmallows creates the right tactile contrast. 

-1 cup unsalted butter -2½ cups all purpose flour -1 teaspoon cornstarch -1 teaspoon baking powder -¼ teaspoon baking soda -½ teaspoon salt -1½ cups granulated sugar -1 large egg -1 large egg yolk -1 teaspoon vanilla extract -2 cups Lucky Charms marshmallows -¼ cup Sugar for rolling


Melt butter in a small bowl and chill 15 minutes. Divide 2 cups Lucky Charms marshmallows from cereal into a dish.  Save now.

 In another basin, mix flour, cornstarch, baking powder, soda, and salt. Combine cooled melted butter and granulated sugar in a large bowl. Mix in the egg, egg yolk, and vanilla.

Mix the dry and liquid ingredients, then add 1 cup Lucky Charms marshmallows. Save the remaining cup of marshmallows to top baked cookies. Add sprinkles or white chocolate chips now.

Scoop dough into balls with a medium cookie scoop (30 ml). Roll cookie dough in sugar and place on a large or small baking sheet. Refrigerate cookie dough balls for 30–60 minutes covered.

Preheat the oven to 375 F for 20–30 minutes before baking the cookies. Use parchment on a big baking sheet. Remove 8 cookie dough balls from and place 3
