Peanut Butter Brookies Recipe

Fudgy Peanut Butter Brookies have a peanut butter cookie, a peanut butter brownie, and a peanut butter spread that tastes great.  

PEANUT BUTTER COOKIES DOUGH – 35 g butter room temperature – 30 g smooth peanut butter – 40 g brown sugar – 70 g granulated sugar – 1 large egg – 1 teaspoon vanilla extract – 125 g all-purpose flour – ¼ teaspoon baking powder – ¼ teaspoon salt BROWNIE – 125 g butter – 125 g dark chocolate chip – 2 egg – 125 g brown sugar – 100 g granulated sugar – 1 teaspoon vanilla extract – 150 g all-purpose flour – 2 tablespoon cocoa powder – ¼ teaspoon salt PEANUT BUTTER FILLING – 80 g smooth peanut butter – 40 g powdered sugar – Small handful of salted peanut


PEANUT BUTTER COOKIE DOUGH Set the oven to 175ºC as usual. Line 20x20 cm pan with parchment paper. Mix butter, peanut butter, brown sugar, and granulated sugar in a bowl for 1-2 minutes with an electric hand mixer.

Mix in egg. Mix in vanilla. Mix all-purpose flour, baking powder, and salt in another bowl. Mix it with butter-sugar. Stir with a rubber spatula until just combined.  

Step 2

Spread ¾ of the cookie batter on the bottom of the baking sheet. Leave it aside while making brownie batter.  

Step 3

BROWNIE Heat butter and chocolate in a double boiler or microwave. Combine eggs, brown sugar, and granulated sugar in a bowl for 1 minute until foamy.  

Step 4

Stir in melted butter and chocolate slowly to the batter. Whisk in vanilla. Use a rubber spatula to mix the all-purpose flour, cocoa powder, and salt into the batter. Spread batter over cookie dough with a spatula.  

Step 5

PEANUT BUTTER FILLING Mix smooth peanut butter with powdered sugar. Spread peanut butter filling and cookie dough on brownie batter and top with peanuts.  

Step 6

Bake 30-35 minutes. When removed from the oven, a cake tester should show moist crumbs but no wobbling. Cool it completely and serve chilled.
