Pumpkin Pie Cookies Recipe

Soft, chewy Pumpkin Cheesecake Cookies have a crispy pumpkin sugar coating. Cooled pumpkin cookie dough with cheesecake and graham crackers. Pumpkin-snickerdoodle cookies are a tasty alternative to cream cheese pumpkin cookies!  

-2½ cups all purpose flour -¾ tsp baking soda -1 tsp pumpkin pie spice -1 tsp ground cinnamon -½ tsp salt -1 cup unsalted butter -1 cup light brown sugar -¼ cup granulated sugar -½ cup canned pumpkin -1 tsp vanilla extract -¼ cup crushed graham crackers

INGREDIENTS

-8 oz cream cheese -¼ cup granulated sugar -1 tsp vanilla extract -¼ tsp ground cinnamon -½ cup  crushed graham crackers -¼ cup granulated sugar -2 tsp ground cinnamon 

Combine flour, baking soda, cinnamon, pumpkin spice, and salt. Mix butter and sugar in a large bowl until smooth. About 2-3 minutes at medium speed. Slowly mix canned pumpkin and vanilla extract.

Curdled mixture is ok. Add the dry ingredients and the cookie dough will look great. Mix wet and dry ingredients on low until just combined. Stir in crushed graham crackers.

Refrigerate cookie dough for 2 hours. Make cheesecake filling while cookie dough chills. Cream cheese in a bowl until smooth for spicy cheesecake filling. Mix sugar, vanilla, and cinnamon.

Put 16 tablespoons on a parchment or wax paper-lined plate or baking sheet. Crumble graham crackers over cheesecake scoops.  Oven to 350 F (177 C). Parchment two large baking sheets.

Spiced sugar is made by mixing granulated sugar and ground cinnamon in a big bowl. Scoop 3 tablespoons cooled pumpkin cookie dough onto your hand. Make a thumb well in the ball's midsection.

Form cookie dough balls. Roll in spiced sugar. Place 5–6 pumpkin cheesecake cookie dough balls 3 inches apart on a baking sheet. Let the leftover cookie dough chill while the first batch bakes.

Pumpkin cheesecake snickerdoodles bake 14-16 minutes. Set edges, inflated centers. The cookie's top may have fine cracks.
