The Best Oreo Brookies Recipe

Oreo Brookies are deliciously fudgy. Beautiful light and crinkly top, soft and fudgy within! The brownie batter, Oreo cookie foundation, and Oreo cookie topping are wonderful!  

OREO COOKIES DOUGH – 50 g butter melted – 40 g brown sugar – 70 g granulated sugar – 1 large egg – 1 teaspoon vanilla extract – 140 g all-purpose flour – ¼ teaspoon baking powder – ¼ teaspoon salt – 4 Oreo cookie BROWNIE BATTER – 125 g butter – 125 g dark chocolate – 125 g brown sugar – 100 g granulated sugar – 2 large egg – 1 teaspoon vanilla extract – 150 g all-purpose flour – 2 tablespoon cocoa powder – ¼ teaspoon salt – 5 Oreo cookies for the batter – 5 Oreo cookies for on top of the brookie

INGREDIENTS

OREO DOUGH Begin by preheating the oven to 160ºC. Line 20x20 cm pan with parchment paper. Butter melts. Whisk melted butter, brown sugar, and granulated sugar for 1-2 minutes.

INSTRUCTIONS

Stir in egg and vanilla. Mix all-purpose flour, baking powder, and salt in another bowl. Mix it with Oreo crumbs in butter-sugar. Stir with a spatula until barely mixed.  

Step 2

Spread ¾ of the cookie batter on the bottom of the baking sheet. Keep the baking sheet and ¼ of cookie dough refrigerated while making brownie batter.  

Step 3

BROWNIE BATTER Heat butter and chocolate in a double boiler or microwave. Beat eggs, brown sugar, and granulated sugar for 1 minute in another basin until light and foamy.  

Step 4

Gently whisk in melted butter and chocolate. Whisk in vanilla. Gently stir the all-purpose flour, cocoa powder, salt, and 5 broken Oreos into the batter with a spatula.  

Step 5

Smooth batter over cookie dough with spatula. Apply the remaining ¼ of cookie dough to the brownie and flatten with your fingertips. Crack more Oreos into large pieces.  

Step 6

Bake 55-65 minutes. A cake tester should show moist crumbs. Enjoy when thoroughly cooled.
